Using the potato to develop an interdisciplinary and interactive online youth education program

Abstract: An online youth education program was designed around potatoes, one of the most commonly consumed vegetables, especially by children. This interdisciplinary four-lesson potato curriculum covers youth education standards on nutrition, health, mathematics, science, history, geography, technology, engineering, and agriculture. We used a multimedia approach to stimulate and maintain youth interest in the lessons and best practices that are known to be effective in education as well as incorporate technology in the classroom. Best practices included using student surveys, games, virtual tours (grocery store and human body), career connections, current events, and video clips. Cloud-based technologies such as Google Maps, Padlet, Prezi, and Kahoot, allowed content to be created and shared synchronously with others for enhanced learning. Online data collection forms were designed to measure changes in students’ knowledge, skills, and behaviors.
